Tutor: So Fan Shum

So Fan has been teaching Chinese cooking in ACE for more than 12 years. From 2024, she will offer a

new weekend series of 3 classes, which will cover the most popular Chinese dishes she’s taught over the

last 12 years, and introduce basic Chinese cooking techniques like including stir-frying, pan-frying,

steaming, and slicing and seasoning meats. 


You will have fun making yummy dimsum like dumplings,

wonton, shaomai, meatballs, as well as crowd favourites like fried rice and fried noodles. You will also

learn how to use bamboo baskets for steaming, which is one of the oldest Chinese cooking methods and

one of the healthiest ways to cook. So Fan promotes a healthy diet, with no MSG in her recipes.

Most of the dishes can be served as party food as well so you can share your dishes with friends and family too!

To help you prepare for each class, So Fan will share a list of the utensils you will need as well as

common ingredients (and where you can buy them) to bring before each class. She will also provide

some specialty ingredients to share between the whole class, so you do not need to buy the whole pack

when you only need a little bit for the recipes – you may be asked to pay $3 to cover these costs on the

first day or directly pay to school together with the tuition fee.
